For your convenience, I created a set of distances from 13.50mm to 17mm in 0.5mm steps.
To figure out which one you need: Measure nozzle distance to X-carriage bottom. You want 2.6mm to 3mm spacing from the probe to the bed, and also need to account for the PCB (1.6mm). Then pick a mount that's smaller than what you got.
Known sizes:
Example: If you measure 20mm, you get 20mm - 2.6mm - 1.6mm = 15.80mm. The closest match is 15.50mm, so print that (will be z=2.9mm from the nozzle). Be sure to measure precisely; if in doubt and you're about to disassemble your only good printer, print multiple parts.
Mind that the mounting system allows for a Z-adjustment (closer to the bed), so only worry about picking an extender that's too large. You can easily use a mount that's 2mm “too short”, and then fine-adjust the distance. But since that means removing the hotend, I personally find it more comfortable if I can just mount the probe flush to the carriage.
After attaching the probe, make sure to verify the distance from the bed. My initial measurement for the D-UHF was a little bit off so I picked one size to large, and I ended up 2.35mm from the bed (as seen on the picture). Good thing I also printed the 14.50mm and could use that then.
I measured the distances off @MWD85's STL, but moved the mount point 10mm to the front (in y), so that the distance to the PCB to nozzle is lower (as recommended by the manufacturer). I did not check this against the Voron CAD, but measured the distance with calipers; the result seems very reasonable.
Your y_offset should be 18.119.
Don't forget to follow the calibration guide, especially with the Carto_TAP beta :)
Obviously I was lazy when designing this, so print with supports. Not cool? Don't look under your gantry then, or design a better mount :P
