The stencils set in a Christmas setting was originally developed as a chess set, with the chess pieces that you could quite literally eat yourself. I said "originally developed" because no biscuits I've made lived long enough to be played with - we ate them almost immediately.

The chess pieces go as follows: Santa as a King, Snow Queen as a Queen, Snowman as a Rook, Nutcracker as a Bishop, Rudolf the reindeer as a Knight, and the Elf as the pawn. They are also scaled according to their value, so the bigger piece you win, the bigger biscuit you eat. You'll have to add a bit of cocoa to your dough to make slightly darker "black" pieces, and the dough thickness should be around 5mm for the best texture appearance. You could use some sugar icing to "glue" pieces perpendicularly to another rectangular biscuit to make them “stand”.

Each piece consists of the Cutter - outline, used to cut the dough, and a piece I prefer to call the Stencil; I use it to apply the texture. It is optional, but biscuits look nicer with it. Because the Stencil is made as a separate piece, you could use different dough thickness by applying different pressure on the stencil with your fingers.

Perimeters optimised to be printed with a 0.4mm nozzle, but I've tried 0.6 and even 0.8 - works fine either way.
About the material - PLA might not be a perfect choice for food-related applications, but as long as you don't have much stringiness and ooziness from retraction - you should not have any plastic residue inside your cookies. PP would be a more proper choice, but it smells and warps.

Happy Holidays, enjoy the cookies!
