You can find the PCB at PCBWAY But you will need to order 5.

Micro switches are Panasonic Hinge Lever Micro Switch, Right Angle PCB Terminal
PN AH1762 but any small right angle micro switch will work
Paddle pot is TE Connectivity 1MΩ Rotary Potentiometer PN 1623767-2
this has a 50mm shaft and will need to be cut down to 40mm

The small toggle switch was from Amazon
Springs are from Ali express and I do have some on my store
Atari lead is also from Ali Express
6mm Ball Bearing came from Amazon, but you can find in many places
I used m4 and m3 threaded inserts
2 x M4x10mm cap heads for the case
3 x M3x18mm for the Internal joystick part
2 x M3x6mm self tappers to hold the PCB in place
When printing the case parts I recommend Prusa Slicer and paint on supports, I included a picture for reference. Print the internals and buttons at a higher quality.
After building a few more you're going to have to tweak the positions of the micro switch to get a good even amount of movement from the joystick.
