So, where to start? 

In principle, the RGB design works, 0.6mm walls + translucent filament. Test before printing! I'm not a fan, so you'll have to do several assemblies to get multiple colors and enjoy them without RGB! The sides are tight and can be difficult. Plan to paint and/or sandpaper.

I'll explain the assembly steps!

Emmental:

• Take the two crusts, some glue, and voila!

For the following bars, the assembly is the same. Morbier has specific steps (in italics). Check the pieces with a dry assembly beforehand!

Brie/Raclette/Morbier:

• Take the spacer/blocker and insert it from the bottom into "Crust#3" following the guides. You can use glue if necessary. Be careful and attentive; a little goes a long way.  Wait for it to dry.
• Take “Top #3” and insert it into “Spacer/Blocker”.
• Take “Center Morbier” #1 & 2, glue them into “Top Morbier”.

Printing:

Ideally, it would be better to paint/fill 

FDM might not be the right choice for Emmental.

Emmental:

• Center: I have little experience with overhangs… If supports are needed, place them on the inside, if possible, for finishing.
• Crust: Since the edges aren't straight in the original object, supports will definitely be necessary…

Morbier:

• Top: Turn over so the top is on the board.
  Rust: See Top.
• Center1&2: It's very thin... 0.4-0.6 wide, 0.4 thick 😅 Think about the possibilities and alternatives. Example: add wool threads/clear glue.

Brie&Raclette:

• Top: flip to have the top on the tray.
• Crust: See Top.
